Our Executive Chef
Mark Gillespie is a seasoned New Zealand chef shaped by some of the country's most recognised kitchens. From early roles at Moka , where the team earned multiple Metro Magazine accolades , to opening The Grill by Sean Connolly during the 2011 Rugby World Cup and over a decade at Botswana Butchery, his career spans fine dining, large-scale events, and everything in between.
Now at Urban Gourmet, Mark brings that depth of experience into the catering and events space. His focus is on produce-led menus that hero bold flavours and quality ingredients, delivered with the precision and care of a leading restaurant kitchen.
